This is my husband’s favourite dinner. Previously he thought meat was the only essential part of a meal. A tasty, mild curry that the whole family will (hopefully) enjoy. (I will add a better photo later, this is a work lunch photo, cashews travelled separately for tasty reheating)

Serve with rice, and a dollop of Greek yoghurt.
I often make a double batch of this curry and keep it in the fridge for dinner a few nights later, or portion it up into work lunches for adults.
If making a double batch for fridge to freezer do not add the nuts in. Sprinkle them on top as reheated nuts are disgusting.
