Everyone gathers round the tray of roast veg once it’s out of the oven to steal the crispy broccoli.
Ingredients
- 1 large zucchini
- 1 large broccoli
- 2 carrots
- 1/2 red capsicum
- 1 tablespoon olive oil
- 1 tablespoon sesame oil
Method
- Preheat oven to 190 degrees Celsius (ie where your honey soy chicken is probably already cooking).
- Chop your vegetables into approximately 1 inch cubes, keeping the broccoli and capsicum slightly larger than the carrot pieces.
- Place vegetables into a deep enough large oven dish, pour the oils over and a pinch of salt and mix thoroughly with your hands to coat.
- Bake in the oven for 30minutes until broccoli crispy and vegetables cooked enough to your liking.
Note 1: Feel free to swap vegetables out for whatever is in season.
